Pumpkin is one of the richest food sources of alpha- and beta-carotene, the orange pigments the body turns into vitamin A, and cooking it down concentrates them. The warmth in the finish comes from ground ginger, where drying turns its gingerols into shogaols, studied for their anti-inflammatory effects.
